Follows standardized recipes and HACCP Guidelines. Relies on guidelines to accomplish tasks. Relies on some experience and judgment to complete job. Works under general supervision. Essential Functions: 1. Assure that all food is prepared and setup for Patients, Cafeteria, MD Lounge, and Catering timely. 2. Assist with special caterings as needed. 3. The cook must plan production so that food is ready at time required. Checks for taste, texture, and appearance. 4. Maintain food at proper temperatures in appropriate size serving pans and handles food following proper procedures to ensure sanitation and safety. 5. Pulls required items in sufficient quantities to prep according to menu forecasts. 6. Keeps areas neat, clean, and sanitized. 7. Prepares items according to standardized recipes for all meals. 8. Have all food items portioned and served at appropriate time. 9. Serve with accuracy and within diet standards 10. Pull items as per production sheet requirements. 11. Prep items for the next day. 12. Portion and garnish all food items 13. Ensures food is at proper temperatures at all times (HACCP) and documents on appropriate forms. 14. Practices safe food handling procedures at all times (storing, thawing, preparation, & cooking). 15. Performs all daily cleaning assignments 16. Participates in Quality Improvement/ Quality Control. 17. Follows HACCP guidelines as per policies and procedures. 18. At times may assist in other areas of dept including but not limited to: MD Lounge, Cafeteria, Catering, and Patient Area. 19. Other duties as assigned throughout the department by the Nutritional Supervisor and/or Manager/Director.DescriptionMinimum RequiredPreferred / DesiredExperienceQuantity food preparation experience preferred.1-year experience cooking in a large institution and/or restaurant style business.EducationHigh school or equivalent TrainingMust be able to operate standard kitchen equipment including but not limited to: Blender, Slicer, Grinder, Chopper, Mixer, Oven, Grill, Steamers, Steam Jacket Kettles, Fryer, and Tilting Skillet. Special SkillsKnowledge of Basic Customer Service Skills by dealing tactfully and courteously with employees, physicians, and visitors. Good Verbal Communication with the ability to understand and follow oral and/or written English instructions. Good Communication skills to communicate effectively and appropriately with patients, customers, and co-workers. Must be able to read and write English sufficiently to follow recipes and production standards. Must have working knowledge of food preparation for modified diets (ADA, Low Sodium, Renal, Low Fat and Cholesterol). Must be able to adjust recipe quantities and be familiar with food preparation terms and cooking methods. Must have knowledge of proper sanitation procedures and techniques. Must be able to plan output to meet service and time demands. Good organizational skills. Ability to forecasts demand and ensure preparation for scheduled skills. Ability to complete assignments within prescribed time limits. Ability to maintain effective working relationships with fellow employees. Some exposure to fumes/gases, high pitched noises, and communicable diseases. Frequent exposure to potential electrical shock, toxic/caustic chemicals, moving mechanical parts, needles and/or other sharp objects, latex exposure, and hospital approved environmental cleaning products. Very frequent repetitive motions and extreme conditions (hot or cold). Needs to be tolerable to extreme temperature changes from moist steam heated environment to cold refrigerator/freezer environment. Ability to stand /walking for long periods of time (6 hours or greater). Ability to stoop, squat, and/or kneel frequently. Ability to push/pull, lift, and carry from 0 to greater than 50 pounds occasionally including carts, pans, and trays of food. Ability to reach, twist trunk and neck frequently. Require use of personal protective equipment during tasks/activities including but not limited to, back support belts, gloves, masks, and safety glasses. Working conditions are somewhat unpleasant, subject to burns from food and equipment, cuts from knives and sharp objects, falls from wet floors, and temperature extremes from heat to cold as there is a need to work with equipment to cook and access to refrigeration/freezers.
